The spore count of gas-producing clostridia in raw milk is considered a quality indicator for the production of hard cheese and influences the payment price of milk. The presence of these microorganisms causes the phenomenon of late swelling in aged cheeses (which are the ones with the highest added value) causing fractures and organoleptic alterations. Currently there is no ISO standard method for this microbiological parameter and those used so far are complex, slow, not very selective and not very reproducible. SY-LAB has developed an alternative method that allows a quick, automated and reliable determination of this parameter and a simplification of documentation. The scope of the method includes milk and milk products. The method with a minimum sample preparation provides quantitative results in just 48 hours. The system uses microtitration plates in SBS format and a scanner including evaluation software (AMP-6000 Scan) for the evaluation of the plates. Manual evaluation by visual inspection and counting of wells with color change (red-yellow) is also possible.
